Winter Comfort Food
During the colder months, casseroles are great as a comfort food. One of our family favorites is Tater Tot Casserole. My children request it often, although I only make it about once a month. My daughter even makes it now, too.
This casserole is also easy to make up ahead of time, too and can easily be altered to make lighter. We make this for dinner but also can be breakfast.
Most tater tot casseroles are made with hamburger meat. In one of the first years of marriage, I asked my husband to get a roll of hamburger meat at the store, and he accidentally picked up sausage. I used the sausage, and we loved it even more than hamburger.

Tater Tot Casserole
Ingredients
- 2 lb. ground pork sausage
- 2 cans cream of mushroom soup
- tater tots
- 2 + cups sharp cheddar
Cook sausage and drain grease. Stir together with soups. Place in bottom of greased 8×8 pan. Place tater tots on top according to what you desire. Sprinkle with cheddar cheese. Bake at 350 for 25 minutes. Take out. Turn up heat to broil. Put under broiler for 2-3 minutes - watch carefully. Enjoy!
