Wet Burritos

This is an extremely versatile recipe that’s so easy to make ahead and then refrigerate until you’re ready to throw it in the oven. The basic directions are as follows:
- fill flour tortillas with a bean only, beef, or chicken mixture
- roll the tortillas and place seam side down in a baking dish
- cover with enchilada sauce until the burritos are completely covered
- sprinkle liberally with shredded cheese (Cheddar, Colby Jack, etc.)
- bake at 350 degrees until the cheese is bubbly and the burritos are heated through
Burrito Filling Options:
- Refried beans. Fill the tortillas with just refried beans.
- Ground beef. Brown ground beef with chopped onions. Add taco seasoning and water (2 TB taco seasoning and 1/2 cup water per pound of ground beef) and simmer for 10 minutes before spooning into the tortillas. Put a spoonful of beans on each tortilla before adding the ground beef to the burrito.
- Chicken. Put chicken breasts in a slow cooker and top with salsa. Cook until chicken is done and then remove the chicken and shred with two forks. Return chicken to the pot and mix together with the salsa. Put a spoonful of beans on each tortilla before adding the shredded chicken to the burrito.

Oh I have been looking for an easy burrito recipe of sorts. I found several but I wanted a homemade sauce instead of a canned version. Thanks, I LOVE this site.
