Unstuffed Cabbage Skillet

Ingredients

  • 1 onion, diced
  • 1/2 green pepper, diced
  • 1/2 -1 pound ground beef
  • 4 cups diced fresh cabbage
  • 1 c. frozen corn
  • 1 can diced tomatoes
  • homemade creamy tomato soup (recipe below)
  • salt, pepper, basil

Directions

Cook onion, green pepper, and ground beef until meat is cooked through. Drain fat. While the beef is cooking, prepare homemade creamy tomato soup (see below.) Add cabbage and corn to the skillet and cook over medium heat for 3 minutes. Add diced tomatoes and cook until cabbage is completely wilted. Add soup, and about 2 teaspoons each of salt, pepper, and basil, more or less to taste. Simmer until sauce is the consistency you’d like. If it gets too thick, add water 1 T. at a time, making sure to readjust seasonings if needed. Serve over mashed potatoes, rice, or egg noodles.

Creamy Tomato Soup - Ingredients and Directions

  • 1/4 c. butter or margarine
  • 1/4 c. flour
  • 2 cans tomato sauce (15 ozs. each)
  • 1 c. milk
  • 2 t. each sugar, salt, pepper, basil
  • 1 t. garlic powder

Melt margarine in a saucepan over medium heat. Whisk in flour and cook for 2-3 minutes. Whisk in tomato sauce and milk. Bring to a boil and let simmer until thickened slightly (you want it to be thinner than a gravy consistency). Remove from heat and stir in all seasonings.
