Thursday in Heather’s Kitchen
This morning (well truthfully, this whole day) was rough. I got very little sleep last night, because Cakes kept falling out of bed! She just recently moved from her crib to a toddler bed, and life has been difficult ever since. Now that she can get out of bed freely, she does, and when she’s no longer amused by any of her toys, she knocks repeatedly on her bedroom door and yells for one of us to come get her. Last night, she finally fell asleep at 9:30, but around midnight I heard a loud thump, followed by a shriek and a wail. When I went into her room, her bed rail was on the floor, and so was Cakes. This happened again around 3 AM. She must be the only child in the world who can still manage to fall out of bed even though she has protective railings on either side of her.
This morning, I was barely conscious when I stumbled into the kitchen. Thankfully, my helpful (and cute!) husband had brewed some freshly ground Starbucks coffee, from whole beans that we purchased for only $2.50 at the scratch and dent store. Bee requested oatmeal for breakfast, so after I gulped down a cup of coffee, I started some water boiling, with just a pinch of salt. I buy quick oats in bulk from a nearby Amish grocery, and store them in gallon ice cream buckets with lids, because we are a family of oatmeal lovers. Old-fashioned, chewy oatmeal topped with lots of brown sugar and raisins is one of our favorite breakfasts.

Today was Thanksgiving dinner at school, and even though Bee doesn’t like mashed OR sweet potatoes, she decided that she would just eat turkey and fruit. No lunch packing today! After I dropped Bee off at school, I again surveyed the defrosting progress of the 5 lb. package of frozen chicken, which has been in my fridge since Tuesday night.
I’m starting to think that this chicken has a personal vendetta against me, because it just simply refuses to thaw.
I don’t understand it. Is my fridge extra-cold, or what? I was so annoyed with the chicken that I decided to put off dinner planning, and check my blog comments instead. I think I might be just a teensy bit addicted to blogging.
After a lunch of pot roast leftovers, which were even more yummy today than yesterday, I decided to organize some files. While going through my coupon file, I happily discovered that I had 10 coupons from Casey’s pizza boxes!

This meant that my supper dilemma was solved, because when you get 10 coupons, you get a large, Casey’s pizza of your choice, FREE! We order out so rarely that it usually takes us about a year to accumulate 10, so when we do, it’s a special treat. It was an especially nice surprise today, because it’s freezing cold and gloomy here, and I’m tired and didn’t feel like cooking anyway.
We ordered a taco pizza, which my husband and I love.

Bee likes it too, but of course she picks off all of the vegetables. Cakes will eat it as long as we let her dunk it in ketchup. Sometimes I think that we should just give her a bowl of ketchup and a spoon. Hey, ketchup is a vegetable, right?
After supper clean-up, I examined the chicken one more time. It feels a little more thawed on the outside, but I’m still skeptical. If it’s not defrosted by tomorrow morning, I’m donating it to science.

I rarely can get things to thaw in decent time in the fridge. I try to freeze most things flat and spread out so they’ll thaw faster, but you can’t do that with a whole bird! I cooked a chicken last weekend and finally set it on the counter for several hours during the day before then put it back in the fridge to finish thawing. It was still icy in the inside, though. Brr.
