Sunday in Elizabeth’s Kitchen
“Sunday in Elizabeth’s Kitchen” feels like a deceptive title — I hardly stepped foot in the kitchen all day. Breakfast was the only meal I made today. You can be sure that the one week you try to blog about the normal, the week ends up being abnormal!
Sunday is the only day of the week that my husband and I wake up at a remotely similar time, but we usually end up following the pattern for the rest of the week: self-serve breakfasts. Regardless of the day of the week, my breakfasts are of the quick and easy variety. This morning I had a banana, an apple, some cheese slices, homemade bread. Peppermint tea is simmering in the background of this picture:

Fatigue is a major component of my health problems, so Sunday lunch is one meal I don’t feel like cooking very often. Instead, on Saturday I generally fill up the crockpot with a soup or casserole and leave it in the fridge overnight. On our way out the door Sunday morning, I flip on the crockpot. It is a large crockpot, which allows us to either have company over spontaneously and to have lots of leftovers for freezer lunches. I prefer soups because they’ll keep in the crockpot without burning if we’re invited elsewhere for Sunday lunch, which happens frequently.
This week, however, we brought homemade rolls to a church potluck and skipped the crockpot altogether.

We were out again in the evening, so we snacked a little here and there on fruit and yogurt. I didn’t cook anything, and I didn’t take a picture because we ate on the run. So, imagine yogurt and another banana.
Other than fetching bananas and boiling a little water for tea, Sunday ended with me hardly stepping foot in the kitchen. In fact, Saturday’s dishes are still drying on the counter:

Oh, I am so glad my kitchen counter isn’t the only one to look like that! Even after running the dishwasher once a day, there are still a lot of dishes to wash, too many to fit in a drainer. I pile them on a towel on the counter where they sit for several days. I don’t care for the job of drying and putting the dishes away, but it does drive me crazy having them sitting there!
