Summer Lunch Box Challenge
This is a guest post from my sister in law. She is a stay at home mom to three children and blogs about her life at Mom’s Tool Box.
I hate packing lunches for my children only to find them very partially eaten. One bite out of that lovingly prepared sandwich or, worse yet, a completely empty lunch box at the end of the day which leads me to wonder if the whole thing was dumped, except for maybe the cheese stick, really frustrates me.
Last fall I made a list of what I thought would be interesting lunch box options and vowed to try them out in lunch boxes throughout the year. Surely I would find some new favorites the kids would like and I felt were reasonably healthy.
But then the school year moved into full swing and I didn’t want my kids to starve due to weird choices made by mom. The list was lost.
But now it is summertime and the list has resurfaced.
And I am going to solve my lunch box woes before the school year even begins. My kids and I are going to work our way through this list, meal by meal, and see what works. I’m going to try to go into this with an open mind and try everything… even the things I think they might not like. I will make almost all recommendations that come my way and see what is met with approval, both theirs and mine.
Because I know I cannot be alone in all my lunch box frustration, I am calling all lunch box puzzled moms to band with me and learn together. Together we can conquer this battle and find yummy yet nutritious lunch ideas that our kids will actually eat away from home.
I’ll try out a few ideas each week and report back to you right here every other week for the rest of the summer. And if you have any ideas you’d like to share, PLEASE suggest them. And together, we will be ready to take on all 180 days or so of lunches when the school year begins.

Have you tried peanut butter with banana on whole wheat? My kids and I love them.
