Saturday In The Kitchen With Chubbie Chica
Oh - this in my last post and I am sad. I have had fun this week and hopefully you have enjoyed the meals I have prepared. Hopefully I have shown you how “tasty” food can be low cal!
For Breakfast:
Bacon, Egg and Cheese Bisquits and Orange Juice - total pts are 5 for the entire breakfast!
For this I use Reduced Fat Grands, Turkey Bacon and Kraft Free Cheese.
For Lunch:
Select Harvest Mexican Style Chicken Tortilla Soup - 2 pts
Cheese Pita’s - 2 pts for 1 pita half
For the Cheese Pita’s:
3 Pita bread pocket halves
Spray butter
Garlic salt
6 T - 2% shredded cheddar cheese
Separate pita bread halves so that you have 6 halves. Spray each with spray butter, sprinkle w/ Garlic salt and top with 1 T shredded cheese. Toast until crispy. My kids adore these…I would have never guessed!
We had a session today for family portraits and my son’s 2nd Birthday photos (he is born on Halloween) and it took longer then expected. I was not prepared, as I should have been, to cook what was on my menu so what was I going to do on short notice………this is what I came up with…..
For Dinner:
Chicken In A Basket - 4 pts
Ingredients:
6 chicken breast (since I wasn’t prepared I just used frozen bagged0
6 carrots
6 potatoes
2 cans FF Cream of Mushroom Soup
3 onions
Aluminum Foil
Tear off a sheet of foil, make it big enough to wrap around once you stuff it. Place your chicken breast in the center. Chop on carrot and potato and place on top/around chicken breast. Take 2 gracious T. of Cream of Mushroom Soup and place on top.
Now fold the edges up around the food and place on a baking sheet. Complete one basket for each person you are serving.
Preheat oven to 425 and bake for 60 minutes. Remove from oven and carefully open your aluminum foil (there will be a lot of steam so please be careful)
Transfer to a plate and your ready to eat. Chicken, veggies and potatoes - there should be a creamy sauce around it.
