Recipes : Apple pie

Ingredients:

- 2.5 kg Pippin apple, peeled, cored and cut into wedges
- 250 g flour
- Pinch of salt
- 140 g of solid butter
- 6 tablespoons cold water
- 3-6 tablespoons milk
- 1 tablespoon heavy cream
- 1 large egg yolk
- 1 tablespoon ground cinnamon
- 120 g brown sugar
- Granulated sugar to serve

Elaboration:

Mix flour and salt in a bowl and stir in butter until a rough and fine mixture as crumbs of bread. Then add cold water and milk to flour mixture and knead until dough is firm and consistent tone.

- Preheat oven to 200ยบ

Mix prepared apples with brown sugar and cinnamon for the filling. Divide the dough in half and spread one half in a circle of 30 centimeters. Sprinkle a little flour to prevent dough from sticking. Carefully fold in half and placed over a plate of about 20 inches, put the dough in the center of the container. Carefully unfold the dough and press dough to take the shape of the mold. Add the apple filling over the pie pan with the dough covered. Cut off any excess dough with a knife, leaving 2 inches extra.

Extend the second disk of dough, as before. Carefully extend it over the apples of pay. Compress the top and bottom of the dough at a time. Cut off the excess dough with a knife, leaving a surplus of 2 centimeters. Fold the dough over itself to the edge of the protruding portion of the edge of the mold. Fold the edges using your thumb and forefinger.
