Monday In The Kitchen With Chubbie Chica

Well it has been an interesting day today…so far!  Our kitchen is the hub of our house so that is where a lot of stuff gets completed.  Chubbie Chica was in the news paper today, oh did I mention, FRONT PAGE,  and my phone/email has been exploding.  Although I did manage to cook :0)  You can go over to Chubbie Chica’s blog and see Menu Monday’s!

With 5 kids, we keep breakfast simple.  Plus the kids are crazy about cereal.  With all the different bus schedules we just keep it simple.  Also, I really don’t like to start a riot at 6:30 a.m.!

For breakfast we had:

Cheerio’s (the generic version)
Fruit Topped Biscuits

To prepare the the Fruit Topped Biscuits, I use Reduced Fat Grands.  Bake them as usual, although I punch the center in a little so there will be a little hole.  Once they are done I simple use any all natural fruit preserve (I use all natural because the points are lower on WW’s but you can substitute with any kind) and place a spoonful in the center hole.  Then I take my vanilla icing and sprinkle across the top!  Very simple and the kids will love them!

I have done nothing but clean and do laundry today so lunch was just a Chicken Fajita Lean Pocket and some FF Pringles.  I had a little kitchen help today!

For dinner we had:

Acapulco Chicken 7 - WW pts (6 servings)
Green Beans 2 - WW pts (6 servings)

Acapulco Chicken Ingredients:

(2 c uncooked rice)
½ c sliced mushrooms
1 ½ lb boneless/skinless chicken breasts, diced
14 oz can FF chicken broth
12 oz can FF evaporated milk
8 oz salsa
1 c 2% shredded cheddar cheese

Prep:
Layer rice & mushrooms in a 9 x 13 baking dish.

Place chicken on top.

Combine broth, evaporated milk, and salsa and slowly pour over chicken.

Bake 45 min @ 375.  Sprinkle cheese on top the last 5 min of baking.

Green Beans Ingredients:

2 cans of Green Beans
Garlic Powder
1 envelope Good Season’s Italian Dressing Mix

Prep:
Put green beans in a pot with 2 t. of Garlic Powder.  Add the envelope of Good Season’s Italian Dressing Mix and cook on a low temperature for approx. 25 minutes.

  1. Hi! That Acap…can’t think of how it’s spelled at the moment…chicken looks really good. I may need to try that. I would totally be interested in opening my kitchen for a week. That sounds like a blast! My girls and I love to cook. And they’re totally into me taking pictures of them cooking and putting them on my blog (mostly my youngest). After November would be best since we are getting ready to move into our new house the second or third week of November. Whoo Hoo!

  2. My kids love it and if you are in a rush then you can used canned “everything” to make your prep time easier. Have fun!

  5. Will they eat them if they are not in chunks? If so, I would just smash them up before I put them in,,,,also, some of the other brands may not be as chunky so I would use that!
