Menu Plan Week of September 15th
Toni’s Week
I am entering into uncharted territory this week. Due to the busyness of our schedule, my husband is trying to temporarily relieve me of some of my household duties. One of the “chores” he is taking over is the grocery shopping. My husband rarely goes to the store. When he does it is usually to pick up the emergency gallon of milk, plus twenty other things not on the list. He promises me he will stick to the list like glue, and keep us under budget. I am still debating on whether or not to send him with coupons.
Monday
Breakfast - Pancakes
Lunch- Sandwiches, Fruit
Dinner- Spaghetti, Bread sticks, salad
Tuesday
Breakfast - Oatmeal/ Cereal
Lunch- Sandwiches, Fruit
Dinner-Chicken Pot pie
Wednesday
Breakfast - Waffles
Lunch - Smoothies, crackers, cheese, peanut butter
Dinner - Shepherd’s Pie (recipe below)
Thursday
Breakfast -French Toast
Lunch - Sandwiches, Fruit
Dinner - Salisbury Steak, veggies
Friday
Breakfast- Bagels
Lunch- Sandwiches, Fruit
Dinner- Pizza
Shepherd’s Pie
Ingredients
2 lbs ground turkey
1/2 cup chopped onion
Garlic powder
1 can cream of potato soup
1 small bag frozen corn
Mashed potatoes (enough to cover a 9 x 13 pan)
Grated Cheese (cheddar, colby, jack… your choice)
Brown turkey on stove top, add onions during the last 3 minutes of cooking, I also season with some garlic powder. Mix turkey and onions with the cream soup. Spray a 9 x 13 pan with nonstick, then spread the turkey mixture in the bottom of the pan. Then layer the corn on top of the turkey, finally spread the mashed potatoes on top of the corn. Bake covered for about 25 minutes @ 350 degrees. During the last 5 minutes of cooking uncover the casserole and sprinkle with grated cheese.
Kate’s Week
This week is our first full week of school with a full work load. We are also instituting a new schedule this week. So, in an effort to make sure everything runs as smoothly as possible, we’ll be relying on some of our freezer meals and some quick to prepare meals.
Breakfasts
- M - Breakfast cookies, smoothies
- T - Blueberry pancakes
- W - Banana muffins, smoothies
- Th - French toast
- F - Oatmeal, smoothies
- S - Bananas foster crepes
- Su - Sunshine toast
Lunch
- M - Tuna pasta salad, applesauce
- T - Polish sausage & cabbage soup leftovers, crackers
- W - Quesadillas, pears
- Th - PB & honey sandwiches, yogurt
- F - Pizza pockets, pears
- S - Hummus & pitas, carrots & celery sticks
- Su - To be determined
Dinner
- M - Creamy cheese & chicken enchilads (recipe below), black bean salad
- T - Beef stew & biscuits
- W - Curry chicken & broccoli casserole, tossed salad
- Th - Ham & cheese strata (recipe below), maple-glazed carrots
- F - Taco lentils over rice, cantaloupe
- S - Chicken & dumplings or chicken pot pie
- Su - Salisbury steak, mashed potatoes, garlic zucchini & mushroom saute
Creamy Cheese & Chicken Enchiladas
- 1/2 lb. chicken, fully cooked and shredded
- 6 oz. cream cheese, room temperature
- 1 c. shredded cheddar cheese
- 1 small can diced green chiles
- 1 t. salt
- 1 t. cumin
- 1/2 t. chili powder
- 8 - 10 tortillas
- Enchilada sauce of choice (green or red, homemade or canned)
1. Mix the first 7 ingredients together.
2. Place around 1/4 c. filling down the center of each tortilla. Roll up and place in a casserole dish. Repeat until filling is gone.
3. Cover with enchilada sauce and bake for 15-20 minutes at 350 degrees.
Ham & Cheese Strata
- 8 slices bread, white or whole wheat
- 2 c. shredded cheddar cheese
- 1 1/2 c. ham, chopped
- 2 1/4 c. milk
- 4 eggs, beaten
- 1 t. salt
- 1/4 t. dry mustard
- 1/4 t. paprika
- 1/4 t. pepper
1. Cut the crusts off 5 slices of bread and set aside. Place remaining 3 slices of bread and the removed crusts into the bottom of a greased 13×9 casserole dish.
2. Layer the ham and cheese on top of the bread. Cut the remaining 5 slices of bread in 1/2 and layer on top in two rows.
3. Combine the milk, eggs and seasonings in a small bowl. Pour over bread. Cover and refrigerate at least 6 hours.
4. Bake at 350 degrees for 45-60 minutes. Let stand 5 minutes before cutting.

Toni, good luck sending the hubby to the grocery store! I tried that a couple of times and was unsuccessful. However, I can send him to Sam’s with a list and he does pretty good!
IF you decide to send him with coupons….I would mark the coupons next to the item or just put them in a envelope and tell him that IF he gets everything on the list(don’t forget to write the quantity of each item needed so that every coupon will work!) he will just need to take all the coupons out of the envelope and hand them to the cashier.
At any rate, I hope that he is successful for you. If it doesn’t work maybe he will switch to doing laundry for you!
