Menu Plan Week of November 10th

Toni’s Week

Thanks for all your lunch tips last week! I am passing them on to my kids, because from now on, they are in charge of lunch! I am not sure what I will be eating for lunch since I am not a big fan of mac and cheese or hot dogs, maybe I will just have a sandwich;).

We will be enjoying Williamsburg on Monday and Tuesday, so our menu officially starts on Wednesday this week.
Wednesday

Breakfast - Oatmeal, Cereal

Lunch - Grilled cheese, chicken noodle soup

Dinner - Salmon Cake Sandwiches, fruit, pierogies, yellow rice

Thursday

Breakfast -French Toast

Lunch - Macaroni and cheese, apples, carrots

Dinner - Shepherd’s pie for the kids (recipe below). Bible Study night, we eat w/ friends before study.

Friday

Breakfast- Pancakes

Lunch-Hot dogs, smoothies

Dinner- Popcorn shrimp, rice, veggies for the kids, Blackened Scallops over linguine with asiago cream sauce for the grown ups

Ingredients

  • 2 lbs ground turkey
  • 1/2 cup chopped onion
  • Garlic powder
  • 1 can cream of potato soup
  • 1 small bag frozen corn
  • Mashed potatoes (enough to cover a 9 x 13 pan)
  • Grated Cheese (cheddar or colby jack your choice)

Brown turkey on stove top, add onions during the last 3 minutes of cooking, I also season with some garlic powder. Mix turkey and onions with the cream soup. Spray a 9 x 13 pan with nonstick, then spread the turkey mixture in the bottom of the pan. Then layer the corn on top of the turkey, finally spread the mashed potatoes on top of the corn. Bake covered for about 25 minutes @ 350 degrees.

Kate’s Week

I’m planning on finishing up some freezer cooking for the month this week. I’m also going to attempt to get at least one batch of cookie dough in the fridge every day this week.

Breakfast

  • M - Doughnuts
  • T - Banana muffins (x3 for freezer) & smoothies
  • W - Crepes w/ cinnamon apples
  • Th - French toast (x2 for freezer) & sausage
  • F - Cheesy scrambled eggs & leftover biscuits
  • S - Cranberry poppy seed bread & smoothies
  • Su - Muffins from freezer

Lunch

  • M - Tuna pasta salad & pears
  • T - Quesadillas w/ black bean & pineapple salsa
  • W - Hummus, pita chips (made from homemade pita bread), & celery sticks
  • Th - PB & honey, yogurt, grapes
  • F - Leftovers
  • S - Pizza pockets (x3 for freezer), applesauce
  • Su - Breakfast casserole, oven-fried potatoes

Dinner

  • M - Black bean & rice wet burritos (x2 for freezer)
  • T - Blackened chicken, cheesy potatoes, green beans (+2 other chicken dishes for freezer)
  • W - Olive stuffed shells (x2 for freezer), breadsticks
  • Th - Unstuffed pepper soup (x2 for freezer), biscuits
  • F - Thai peanut noodles & stir-fry veggies
  • S - E & K date night, Kids - tuna casserole
  • Su - Chicken Francese, garlic spaghetti, sauteed zucchini

  1. Do you have a link somewhere on your site for meals that can be frozen. I noticed that you do a lot of that and would love to try some of those recipes.
