Menu Plan Week of March 16th
Toni’s Week
As I type dh is on his way to the airport to pick up my mom. It would be fitting to have her plan the menu, but since I already purchased most of our food for the month I’ll have to wait until April for her to start menu planning. I finally broke down this week and had dh purchase some convenience foods to help my 14 yo with meals. This bed rest thing is no fun, but the kids are doing a great job of pitching in and helping out! Maybe my mom will be bit by the blogging bug and start taking pictures of everything she makes while she is here!
Breakfast
Cereal, Waffles, Oatmeal, Biscuits and smoothies, French Toast, Pancakes
Lunch
Trying to keep it simple this week, so it will be sandwiches and fruit.
Dinner
Steak and Rice with Veggies
Fettucini Alfredo, breadsticks, salad

Kate’s Week
I have a really busy week ahead of me this week, so I’m relying on some easy favorites. Well, except for St. Patrick’s Day. I grew up eating corned beef and potato pancakes every St. Patrick’s Day, so I’ve loved carrying on that tradition. And Eric doesn’t complain at all, since he LOVES corned beef! I’ve got a big corned beef so that I can guarantee leftovers for hash later in the week. And I’m sure Eric will be eating corned beef sandwiches a few times a day until it’s gone.
Breakfasts

- T - Crepes w/ bananas foster sauce
- W - Chocolate chip muffins & smoothies
- Th - Pancakes
- F - Breakfast cookies & smoothies
- S - French toast
- Su - Leftover muffins & breakfast cookies
Lunch
- M - Tuna pasta salad & applesauce
- T - Grilled cheese & kiwi
- W - Egg salad sandwiches & grapes
- Th - Pepperoni pasta salad & yogurt
- F - Quesadillas & grapes
- S - Ham sandwiches & strawberries
- Su - Sausage & cheese turnovers, apples
Dinner
- M - Something with ground beef and pasta
- T - Corned beef, cabbage, carrots, potato pancakes and rye bread, sugar cookies w/green frosting
- W - Cheesy pasta casserole, zucchini, breadsticks
- Th - Wet burritos, skillet corn
- F - Homemade corned beef hash, leftover cabbage & carrots
- S - Monterey chicken, corn on the cob, onion straws
- Su - TBD

It looks like a really yummy menu. We had corned beef this weekend and will have reubens on Tuesday. I know it’s a little backwards but I needed something easy to make during the week:-)
Both menus sound great - and that pizza looks delicious! I’ve never tried it with whole wheat crust; I’ll have to give it a try. Have a great week!
