Menu Plan Week of August 4th
Toni’s Week
Breakfast
Monday- Pancakes
Tuesday- Muffins
Wednesday- Oatmeal/ Cereal
Thursday- French Toast
Friday- Whole Wheat Waffles
Lunches
Lunch—Sandwiches, muffins, smoothies, leftovers, cut up fruit and veggies
Dinner
Monday- Salmon Turnovers
Tuesday- Out
Wednesday- Bee Rocks
Thursday - Spaghetti, French bread, salad ( we will be having 2 extra kids this night, so I picked a meal that is easy and a crowd favorite)
Friday- Pizza
Saturday -Shepherd’s pie

Salmon Turnovers
Salmon Turnovers- (makes 8 turnovers)
Ingredients:
- 2 cans boneless salmon
- 6 oz cream cheese
- 1 bunch green onion chopped
- 1 celery stalk chopped
- 2 tubes crescent rolls ( I use the low fat kind)
Leave out cream cheese to soften
Cook onions and celery in about a tablespoon of butter on the stove top for 3 to 5 minutes
Mix together cooked onions, celery, cream cheese and salmon (drained)
Take the crescent rolls and put two together to make a square, put a scoop (about 1/3 cup) of the mixture in the center of the square, then fold up the corners towards the center.
Bake for about 10 to 15 minutes in a 375 degree oven.
This a great recipe for a quick meal. It takes about 30 minutes from start to finish, and is easy enough for a kid to make.

- S - Pepperoni pasta salad (from the new 3 Moms recipe ebook)
- Su - Leftovers
Dinners
- M - Pesto and toasted walnuts over angel hair, garlic bread
- T - Pretzel chicken (recipe below), oven-baked Parmesan fries, fresh green beans
- W - Taco salad
- Th - Honey-baked lentils (Thanks Michele!) with brown rice, mixed greens salad
- F - Ham, red beans and rice, cornbread
- S - Chicken wontons, cream cheese puffs
- Su - Turkey meatball subs, corn on the cob, cantaloupe
*Pretzel Chicken
- 1 lb. chicken breasts, pounded flat and cut into fingers
- 2 eggs
- 1 T. water
- 2 t. hot sauce
- 2 1/2 c. finely crushed pretzel crumbs
- 1 t. dried thyme
- 1 t. pepper
- Canola oil for frying
1. In a shallow bowl, whisk together the eggs, water and hot sauce.
2. In a second shallow bowl, mix pretzel crumbs, thyme and pepper.
3. Dip chicken fingers in pretzels, then in eggs, then in pretzels again. For best results, coat the chicken early in the day and let sit in the refrigerator all day. This really helps the breading stay on when frying.
4. Fry chicken in 1 1/2″ of hot oil in a medium-sized skillet. Cook 5 minutes on the first side, 3-4 minutes on the second side.
5. Serve the chicken with any dipping sauces that you like. We really like ranch dressing or a cheese sauce.

Looks like a delicious week in both kitchens. Question about smoothies - I’d love to get some extra fruits into my kiddo, but he has issues with skins/seeds/etc. Do smoothies take care of that problem? Is it like a fruit milkshake? I would so love it if that was a solution for us….. thanks!

Yummmy! Beerrocks are one of my favorite foods! I love them !
I too have been thinking about trying smoothies, but am unsure how to go about it. I’d hate to make a yucky, undrinkable sludge. But, if I could figure them out, they’d make a great breakfast for all of us.

Sounds yummy all around! We’ll be hitting the smoothies wxtra hard the next couple of weeks with braces on the way… The salmon turnovers sound really interesting and tasty!
