Menu Plan Monday: Week of June 29
Kate’s Menu
Breakfast
- M - Baked French toast, blueberries
- T - Chocolate chip banana muffins
- W - Crepes w/ strawberries
- Th - Oatmeal & Toast
- F - Leftover muffin & crepes
- S - Cinnamon rolls
- Su - Monkey bread, bananas
Lunch
- M - Quesadillas, watermelon
- T - Pizza grilled cheese,* cantaloupe
- W - Tuna pasta salad, cantaloupe
- Th - Hummus & pitas, red grapes
- F - Not sure yet, it will depend on Eric’s schedule. We’d like to go for a picnic.
- S - Chicken salad sandwiches, strawberries
- Su - Scrambled eggs w/sausage & cheese, biscuits
Dinner
- M - Spaghetti, fresh green beans
- T - Chicken & grape pasta salad, garlic breadsticks
- W - Taco salad w/ black beans & skillet corn
- Th - Chicken, spinach, and garlic spaghetti, kiwi & strawberry salad
- F - Bratwurst, Parmesan oven fries, grilled pineapple
- S - California club sandwiches, watermelon, 3-bean salad
- Su - Cheeseburgers, crash hot potatoes, corn on the cob
* Pizza grilled cheese is simply a grilled cheese made with mozzarella. You can also add other pizza toppings to the sandwich before grilly. (Pepperoni and thin slices of green pepper is very good.) Once grilled, cut the sandwich into quarters and dip in pizza sauce. For pizza sauce, I just use a small can of tomato paste mixed with 1 t. olive oil, 2 T. water, 1 t. Italian seasoning, 1 t. garlic salt, 1/2 t. sugar, and 1/4 t. crushed red pepper flakes.

Lunch—Sandwiches, muffins, smoothies, leftovers, cut up fruit and veggies
Dinner
Monday- Steak, roasted potatoes, green beans, bread
Tuesday- Shredded beef tacos
Wednesday- Crock Pot sloppy joes, hot dogs, raw fruit and veggies, chips
Thursday, Friday, Saturday – out of town
Crock Pot Sloppy Joes
- 3 pounds ground turkey
- 2 1/2 cups ketchup
- 1 cup water
- 1/3 cup brown sugar
- 1/2 cup diced onion
- 2 tablespoons Worcestershire sauce
- 2 tablespoons prepared mustard
- 1-1/2 teaspoons garlic powder
- 1-1/2 teaspoons salt
Brown turkey meat, when turkey is almost done add onions and cook for a few more minutes. Put turkey and onion mixture into the crock pot and add the rest of the ingredients. Cook on low for about 4 hours. Depending on the temperature of your crock pot you might want to add a little more water.
Serve on hamburger buns.
Crock Pot Shredded Beef Tacos
- One boneless beef roast
- Jar of Salsa
- 2 beef bullion cubes
- Garlic powder
- Water
Brown roast on all sides then place in crock pot. Add jar of salsa, 2 bullion cubes crushed, garlic powder to your liking, and enough water so the roast is almost covered. Cook on low for about 8 hours. Take the roast out and shred the beef with a fork. We like to take our shredded beef and put it on a tortilla with black beans, cheese, lettuce, tomatoes and sour cream.
I love this meal because you can have everything prepared in advance, it is great when company comes or when you have a busy evening.
Joy’s Menu
I had high expectations last week of making lunches since our dinners were taken care of due to evening VBS all week. But (*sigh*) as usual, it didn’t pan out.
Other than a failed attempt at refried beans, the only thing I made successfully last week was pizza pockets, and I didn’t even get to that until Friday evening. But the pizza pockets—a new recipe for me—turned out really well. I made a single batch, and Jeff, Joely, Jerah, and I finished off the entire batch on our own! I’m now looking forward to tweaking the recipe a little bit, making them less “tomatoey,” since Jeff isn’t a fan of tomato sauce.
This week, since my schedule is much decreased and less demanding, I really hope to be able to cook a lot more. I haven’t sat down to make out my July menu yet, so this menu is just put together from the ingredients I have on hand. I’ll be going into town on Tuesday for a homeschool association board meeting, so I’ll be able to pick up some more food then, but for now, I’m planning to work mainly from my pantry. Here’s what we hope to have this week:
- Monday: Lasagna, homemade French Bread, Corn
- Tuesday: Barbecue Chicken, Creamed Corn Cornbread, Green Beans
- Thursday: Spaghetti Carbonara (thanks, Angela!), Peas, Devine Breadsticks
- Friday: Dinner with friends
- Saturday: Big Breakfast (biscuits, gravy, scrambled eggs)

Instead of filling the pockets with pizza sauce, you might try just putting pizza-type ingredients in them with no sauce, more like a calzone. Just put a little pepperoni and mozerella (or anything!) inside and bake them. Have pizza sauce available on the side for dipping. That way people can get as much (or little) of the sauce as they want. It also prevents that leaking problem.
