Menu Plan Monday - 2/23
Kate’s Week
We had a busy weekend. We were out of the house all day Saturday. Sunday was full of lots of work around the house. So I haven’t really taken much time to plan out our menu for the week. Right now, I’m just kind of winging it.
My last-minute plan is to use some of the freezer meals made earlier this month. I’m thinking I’d like to keep the rest of the week fairly easy too. It’s time to restock some breakfast foods in the freezer though, so I’ll get to that througout the week. Then I’ll start planning for next month.
This is one of my favorite weeks of the year because Tuesday is Paczki day! 99% of the world knows it as Mardi Gras. But when you’re Polish, that is not nearly as important as indulging in the fantastic Paczki. My diet will be forgotten on Tuesday for sure!
Breakfast
- M - Apple spiced oatmeal
- T - Chocolate chip muffins (double for freezer), smoothies
- W - Waffles (triple for freezer)
- Th - Crepes w/ bananas foster sauce
- F - Cheesy scrambled eggs and toast
- S - Bagels w/peanut butter and smoothies
- Su - Cocoa wheats and bananas
Lunch
- M - Quesadillas, yogurt
- T - Ham sandwiches, peaches
- W - Tuna croquettes, apple slices
- Th - Bacon, egg & cheese biscuit cups, oranges
- F - Veggie roll-ups, cottage cheese
- S - Easy mac & cheese, carrot & celery sticks
- Su - TBD
Dinner
- M - Chili mac, cornbread
- T - Chicken & black bean tacos, Paczki for dessert
- W - Curry chickpeas over rice
- Th - Ham & cheese frittata, spinach
- F - Florentine stuffed shells, breadsticks
- S - TBD - something fun for movie nigt - maybe just pigs in a blanket, popcorn & root beer floats
- Su - Beef & broccoli stir-fry, wontons
Welcome to the last week of the Hot Breakfast Challenge. I have really enjoyed reading all the recipes everyone has shared. Since we normally eat a hot breakfast 5 or 6 mornings a week this hasn’t been too big of a change for our family, but I now have new recipes and ideas to help add variety to our menu.
We have another birthday this week and on your birthday you pick your breakfast and dinner. Since our birthday girl is turning three, I am helping her pick the meals, since her answer would probably be open sandwich for breakfast, lunch, and dinner. I was hoping she would request the Barbie cake since I now know how to make one, but she wants a castle cake, so I will probably be putting up a tutorial later this week.
As for my 30 days of meals I am on my last few days. I am hoping to stretch our food until Wednesday night, which is my big shopping trip. My new meal list will be posted later this week.

Biscuits and Fruit, Simple Sourdough Pancakes, French Toast, Leftover Waffles, Babka
Lunch
Sandwiches, cheese and crackers, smoothies, mac and cheese, open tacos, fruit and veggies
Dinners
Shepherd’s pie, green beans, whole wheat rolls
Whole wheat pizza, salad
Steak and rice, salad, whole wheat rolls
Wet burritos, open tacos, cornbread
