Enchilada Sauce

 Enchilada Sauce

Ingredients

  • 3 T chili powder
  • 3 T flour
  • 1 tsp cocoa powder
  • 1/2 tsp garlic salt
  • 1 tsp oregano
  • 3 cups chicken broth
  • 1 (8 ounce) can tomato sauce

Directions

  1. Combine all the dry ingredients in a small bowl. (Or you can keep from having to wash an extra bowl by putting the dry ingredients directly into the sauce pan.)
  2. Slowly add enough of the chicken broth to make a thin paste, then add the rest of the broth. (I just added all the broth slowly while stirring constantly with a whisk.)
  3. Cook over medium heat, stirring constantly, until the mixture thickens.
  4. Once the sauce thickens, stir in the tomato sauce and heat through.

How to Make an Enchilada Sauce Dry Mix:

Mix together the spices (first 5 ingredients) and then add 1 tablespoon of chicken bouillon granules to the mix. Store the dry mix in a sealed container until ready to use. Then when you make the sauce, put the mix in a sauce pan, whisk in 3 cups of water, and then follow directions #3 and #4 above.
