Day Two in Angie’s Kitchen

Today started in my kitchen with waffles.  Not beautiful freshly made waffles that I slaved over a waffle iron to make.  No, these waffles came out of a yellow box (you know the one) and I put them in the toaster oven.  This is because, sadly, that’s how I “make” waffles.  (Anyone else “make” their waffles from the big yellow box too?)

We had a few errands to run, all right around lunch time, but having promised that we weren’t going to run through a drive thru (to my husband), I told the kids that we would be eating once we got home.  My sweet little almost-eight-year-old offered up some McDonalds gift certificates that he received for First Communion to buy us all some lunch.  Texting my husband during the long wait in the drive thru, I promised that Jack had chipped in all $5 of his McDonalds gift certificates, and we had only spent $2.69 of our own money.  Jack beamed when I read aloud the message that came back to us, “Tell Jack I’m proud that he shared his gift with his family.”  Chicken nuggets and praise from your Dad — what can be better?

tacos day2 300x226 Day Two in Angies KitchenDinner tonight was what has become a household favorite — taco night!  When I have been doing my big grocery trip of the month, I have been picking up some bulk ground beef and cooking it up all at once.  I make sloppy joe meat and taco meat, and then freeze them into single meal portions.  Tonight, we were able to just thaw and then heat taco meat from the freezer, and each family member got to choose between hard shell or soft tortilla tacos.  Although some of the kids went with just meat and cheese, my own tacos included just meat, romaine lettuce (freshly picked from our garden, and sliced grape tomatoes.  On the side, we had fried green tomatoes and fat free ranch dressing for dipping.

I love how much easier dinner is when there is taco meat just waiting in the freezer!  Does anyone have any tips of other things they freeze that makes part of the meal go much more quickly?

  1. oh fried green tomatoes… you are making me hungry! I freeze a lot of things now. I freeze the fillings for a southwest quiche and just thaw and dump in a pie crust. I freeze the meat mixture for shepherds pie in a quart size bag and the mashed potatoes in another then just dump in a pie plate and top with the potato and some cheese and bake. I try to adapt as much as I can for the freezer and make more than one at a time :)

  2. I will make a double batch of spaghetti sauce with the meat added so just have to warm the sauce and cook the noodles. Always great, or can be used to layer lasagna!

  3. Oh, yum! I haven’t had fried green tomatoes in ages. :D

    We like to freeze pancakes, muffins, leftover chicken, leftover roast,.

  4. Yummy meal!

    I freeze chopped onions, green peppers, celery, anything I chop up and have extra of. Such a treat to find chopped onions to throw into the crock or whatever’s for dinner - when I get a chance I chop them on purpose to freeze.

    When my bag of baby carrots is thinking of getting old, I freeze them to toss into beef stew.

    I guess I tend to freeze produce because I hate to waste it and I buy it with ambition. :-)

    Lats week, I premade pancake batter, and kept it in the fridge for my little one.
    Made the mornings so much easier. I’m not sure how long it lasts in the fridge, I read until “it gets grey”. I made it about 3 mornings in a row with some sliced banana.
