Day 7 in Candace’s Kitchen

Welcome to the final day of our week-long adventure in Candace’s kitchen. We hope you all enjoyed this week as much as we did. Candace’s week was certainly filled with ups and downs, but she really did a fantastic job of persevering. Each day was filled with wonderful, healthy meals and Candace’s post were filled with greats hints and tips for anyone starting on a whole foods journey.

I have to admit it’s been a little overwhelming trying to keep track of what we ate all week and photograph and write about all of it. Especially this week, with all of the doctor appointments, surgery, and all that went along with Chloe’s experience.  Today was actually kind of bad for her, she’s really hurting, and they don’t give out very strong meds for little ones.

So, I’m feeling a little relieved that the week of visiting my kitchen is over.  Not that it wasn’t fun, but I don’t know how you all managed to do it for a month!

This morning we had scrambled eggs with sourdough toast and strawberries.  I always make eggs the same way for some reason.  Don’t tell anyone, but I’ve never fried an egg in my life, and every time I try to hard boil them, they just aren’t right!  I try to be really precise about it with the timer and ice bath and blah, blah, blah.  Hubby puts them in a pan, forgets about them for a while and they’re always perfect. Grrr. So, he generally makes the eggs if they’re not scrambled.

For lunch we had a smorgasbord of leftovers. We truly love leftovers here, so I always make extra when I cook.

Hubby was in charge of dinner tonight.  He does this every once in a while for me. and it’s nice to have a break.  He also cleaned the kitchen this afternoon, which is just so awesome.

We had cheeseburgers, grilled garden squash, chips, and grilled apple. I had all of these great plans of adding black bean puree, sprouted wheat berries (never did make my salad), ground flax seed, and maybe a few other goodies to the hamburger, but I was not allowed.  Hubby said some things are just not meant to be healthy, and so my plans were foiled.

When we grill squash, we just cut it lengthwise, oil it, and season it with salt and pepper.  The apple was just cut in half and cored.

Looking back at the week, I think I could benefit from a week long plan of attack, instead of day to day.  I don’t know why I find it difficult. Hopefully, I can get it going soon.

I’m wondering if creating a menu feels like a chore for others, or if it’s something you enjoy?

  1. Wow- I never would have thought to grill an apple. What a great idea! :) I love the idea of putting basil leaves on your burger too.

    Sometimes menu planning seems like a “chore” for me, but I “make” myself do it. It makes the rest of the week so much easier for our family! I try to keep it fun by trying out new recipes during the week.

  2. Candace, we prayed for Chloe this week! :) I’m glad the surgery went well and eventhough she’s in pain, hopefully it’ll pass soon :)
    I actually enjoy menu planning, coupon clipping and “list-making” which might make menu planning easier (or at least more fun) for me. I use a white board at home and just stand in front of it for about 15 minutes (it’s in the kitchen very close to the fridge so I can reach over and see what I already have to cook with!). I don’t follow the menu to the “tee” because I cook mostly from what’s in the pantry and fridge so I have flexibility to switch the menu around a bit.

    I have really enjoyed reading about your week. I have been praying for Chloe too, I hope she is better soon. I have learned so much from your menu this week, I hope to use some of your ideas soon!
