Day 7 in Amy’s Kitchen

Ahhh, day 7 and all is well. Everyone’s appetite seems to have returned, so I whipped up a ham and cheese scramble this morning along with the no-rise cinnamon rolls posted on the Sunday Swap last week.  The rolls were tasty, but we want to call them biscuit rolls, because they seem to have more of a biscuit texture.  Perfect when you’re in a hurry!  Excuse the photo.  It looks just like I’ve been feeling lately:  a little blurry.

I was definitely in a hurry this morning. Had to wrap my eggs in a tortilla, breakfast burrito style, and take it to-go.  My oldest and I volunteered at the Tiny Town library today.  A lovely time of quiet:  she dives into the craft box, I have 2 1/2 hours of mostly uninterrupted email checking.  Our town library is run mainly by volunteers.

This afternoon we ate black bean tostadas and banana/strawberry/orange smoothies before heading out to the basketball game.  It felt so good to get out of the house today!  The weather was perfect, aside from the crazy Kansas wind.  I’ll take the mild temps, though, even if it is just for a day or two.

I would so love to tell you that that’s all we ate today, but Daddy’s team bus stopped at a fast food joint on the way home from a very disappointing game, and well… I was “The Best Mom Ever!” because we followed. What a treat — it’s fun to surprise the kids like that! Clearly I don’t have any healthy eating tips for you in this outing, but I do have a frugal tip or two: skip the kid’s meals and don’t order a drink. Water is healthier (might as well do something healthy) and those little plastic toys might not make it home in one piece anyway.  The kids and I were able to split a couple of items and eat for under $8.00.
