Day 6 in Naomi’s Kitchen

We are going to make applesauce today!  (along with start the freezer cooking)

We recently visited Costco and got their amazing bag of apples … set to peeling and now just need to wash out the crockpot.

Again, I defer to Steph at A Year of Crockpotting for her tried and true recipes.

We are using about 20 apples, so I simply multiplied the rest of the recipe from there (and I also skin my apples … our littles don’t like the skin)

–4 large apples, skinned ,cored, and cut in quarters
–juice from 1 lemon

–1/2 tsp cinnamon

–1 tsp vanilla

–1 T brown sugar

–1/4 cup H20

Skin, core, and cut your apples into quarters. Plop the pieces into your crockpot. Add the juice from the lemon, and the water. Pour in the vanilla (I used imitation–we were out of the good stuff), and add the cinnamon and brown sugar.

Cover and cook on low for 4-6 hours. When the apples are super tender, mash with a potato masher or large fork. My apples were very tender after 6 hours, and I used a fork.

The only other thing on tap for our day is to (and it’s a big one) do my shopping for a day of freezer cooking.

I’m going to go the “knock ‘em all out” routine and go for a 30 day meal plan …. YIKES!  Here is my shopping list from awhile back that I’m going to repeat.

THAT shopping list will create this 30 Day Plan.

The last time I did this exact meal plan, the results were pretty good for our family of five … $550 for about 40 meals.

I’ll close it out for now … MUST get to the grocery store!!
