Day 6 in Libby’s Kitchen

Welcome to 6th and final day in Libby’s kitchen. We all really enjoyed spending this week seeing the vegetarian lifestyle of Libby and her family.

Well, I can’t believe the week is over. It went by so fast. I have really enjoyed sharing my kitchen with you and I hope some of you are inspired to cook some vegetarian meals. They really are very easy and yummy. Way before I became a vegetarian I had always thought it would be too hard and complicated but as you can see it’s not.

This morning Christy requested french toast. Now, I have to warn you we have french toast the Scottish way. So it savory not sweet and is topped with tomato sauce. It’s a family favourite here. I can imagine the look of horror on your faces having seen it first hand when in the States and Christy is putting ketchup (tomato sauce) on her toast. I made hers with white bread and mine with wholegrain.

Lunch was another easy affair. Dh was home very briefly so I made us both mexi-bean wrap - warmed up mexi-beans, sour cream, tomato, lettuce and cheese wrapped in a tortilla. Delicious!!!

Tonight I had planned zucchini slice but none were available when I ordered my organic vegetable. Instead I thought it might be fun to celebrate the opening of the Olympics in China by having take-away Chinese. We ate at our formal dining table which was fun.

I had veggie chow mein with some boiled rice. Dh had beef with a honey, pepper sauce, Amy had honey chicken and Christy had prawn chips. Dh also bought some fortune cookies - which was fun.

And as promised a quick tour of my veggie garden. It’s not real big but enough to supplement our veggie requirements. Being Winter there isn’t much growing at the moment. We have plenty of lettuce, celery, onions, and carrrots. Snow Peas, Cauli and Brocolli are still developing. In the Summer we also grow tomatoes, strawberries (you can see the net at the end of the garden), cucumbers, pumpkin and zuchinni. This is our 3rd year of our garden and it seems to get a bit better every year. I would encourage you all to try planting some homegrown veggies - you won’t believe the taste.

We also have a little green house but haven’t had any luck with growning our own seddlings as yet. Hopefully this year. We have a composting bin as well. And our chickens - cute aren’t they?

  1. My husband puts ketchup on french toast as well. His whole family does and I always thought it was the strangest thing. But now that I know it’s the Scottish way to do it, it all makes since. His grandmother was Scottish! I’ll have to let him know that he’s not a weirdo afterall. ;)
