Day 6 in Donielle’s Kitchen
Well, we had a rough start to our Friday morning seeing as how I got a total of about 3 hours sleep because our little one seems to have come down with a nasty cough/cold. The good news was, he slept until 11 am! The bad news, I was to worried about waking him up, that I stayed out of the kitchen like it was the plague.
But when he finally woke we sat down and had some soaked oatmeal, leftover sweet potatoes, and some frozen blueberries along with a glass of water to try and up his fluid intake. And he also seemed to be feeling a bit better so I got to work on tossing more bread into the bread maker, and whipped up a loaf of zucchini bread for the weekend as well.(and a small tip on lowering the sugar and oil content of the bread: replace some of the oil/butter with applesauce and it also helps sweeten it up so you can lower the amount of sugar)
Luckily I also had time to turn that cream I had on hand into butter and later on I’ll make some buttermilk biscuits out of the leftover buttermilk.
Lunch was a crazy hogde podge of things we had leftover in the fridge. I hate to throw things away and wanted to make sure we ate a few things up before the weekend came along. I ended up having the rest of our leftover roast along with some leftover broccoli, while the little one had what was left of the tuna, his leftover omelet from the day before, a few pieces of broccoli, and half a PB&J.
From there on out, our day pretty much went downhill with the kiddo refusing to nap. So instead of getting anymore baking done, I tended to him and we spent most the afternoon curled up on the couch. So when my husband called to see what kind of juice I wanted him to bring home (I never have it in the house as I look at it as empty calories, but when he’s sick I figure he needs more fluids) and then asked if I needed anything else. My answer?
“Dinner”
Seriously after the no sleep from the night before and dealing with a sick and crabby child, the steaks I had planned to make were just going to take way to long! So, he brought home some Arby’s. I stuck with the grilled chicken sandwich, and the little one got some chicken nugget thingy’s and only ate one of them. I actually couldn’t tell you what my husband got. Seems I was to busy trying to keep our boy from having a major meltdown every time some little thing happened.
So there is day 6 in my kitchen. Definitely not normal for us, but when sickness happens, it’s all about survival.

I make my zucchini bread the same way. I like to make large batches at a time, and then put the loaves in the freezer, for when we need a quick breakfast. Thanks for the reminder about the butter- I need to go get a batch made today!
