Day 5 in Kristen’s Kitchen

Thursday, Day 5
Ah, Tortillas. That’s pretty much what I based all of our meals around today. For some reason, those Mission Tortillas called my name every time I stepped in the kitchen and I could no more resist them than I could a siren’s call. Tricksy Tortillas.
For breakfast this morning, I scrambled up some eggs and cheese and swaddled them in a tortilla. While a breakfast burrito isn’t new by any means, the kids gobbled them up and were quite content. I count that as a success and as another breakfast to put into the rotation, but maybe next time with whole wheat tortillas and a veggie or two snuck in.
After breakfast I loaded the kids up and took them to the Doctor. As you can see from the breakfast picture, Tot still was looking and feeling crummy, so I decided to take her in. She was rewarded with a shortened stint of antibiotics to get that cough out of the way so it doesn’t turn into pneumonia. I don’t care for medicine in general, but I really don’t care for pneumonia. She seemed to rally later on in the day, so we’re going to call the medicine a good idea.
For lunch I made some ham and cheese quesadillas, and again, total hit. They each kept asking for more and stealing each other’s food. I’d feel more flattered if I didn’t know that Little David will steal any food that isn’t nailed down. Kid will even lick it off the floor if he thinks it resembles food in some way. He didn’t get to be an almost 40 pound 2 year old by turning his nose up. As for myself, I had a quesadilla as well, but I had one with cheese and some chopped peppers and onions. Not too bad, a little crunchy, but I can fix that next time. I do believe that the Chapman’s will be having a lot more quesadillas in the future now that I know how much we all like them.
Dinner. Ah, the hardest part of my day. I’ve neglected to mention it, but Dave has been out of town since Monday night. By the time you read this he’ll be back, so I don’t feel too weird about posting my totally alone circumstances. And yes, the kids only get sick when he’s gone and I always choose to do guest blogging when he’s gone and the kids are sick. We do this on purpose. It spices things up,
No really, what it does is make me want to go a little bonkers at 5pm because I can’t think of anything that will please a hungry kid, a sick kid, and a bored-and-seeking-comfort-food adult for four days in a row. And make it good enough that I don’t mind blogging about it. But on the plus side, you’ve all helped me not eat out every single meal this week. Dave thanks you. My jeans thank you. The pizza place does not thank you, but I expect you will live through that. Regardless, for dinner tonight I was totally stumped, so I fed the kids the much hurrayed Spaghetti leftovers again (ew. How are they not tired of that??) and made myself some Sauteed Acorn Squash and Onions and some home made Tortilla Chips.
First, I looked at the acorn squash with dread at how long it would take to skin the thing. Then I used a potato peeler and cursed myself when I realized how much faster that was than doing it with a knife like last time. When finished, I cubed it and set it in a bowl. Then I chopped up about a cup of onions and started them sauteeing in olive oil. When they were good and clear, I dumped in the squash and put the lid on and ignored it for awhile. While I was ignoring the squash, I brushed two tortillas with butter and sprinkled them with salt. I cut them into triangles with a pizza cutter and stuck them in the oven at 350 until they were good and crisp.
About the time they were done, the squash demanded my attention and I stirred it around and checked for tenderness. When I could cut through it easily with the spatula, I took it off the burner and scooped some onto my plate. Then I relaxed in front of the TV and ate my squash and onions off of the chips. Then I spent the next two hours trying to get my son to sleep. But whatever, the meal itself was totally awesome.
To wrap up the evening, and to wind myself down, I fixed a cup of coffee and added milk, hot cocoa mix, and some cinnamon vanilla coffee creamer and settled down to watch some Letterman.
Now, that’s the way to relax.

I can put anything in a tortilla, call it a quesadilla and my kids will eat it. We always have tortillas in the house!
