Day 5 in Kimberly’s Kitchen
Today is my daughter’s birthday so when she woke up this morning I asked her what she wanted me to make her for her birthday breakfast. Do you know what she told me? POP TARTS! How is a Pop Tart a birthday breakfast? I was thinking maybe French toast with cinnamon cream sprinkles or something along that line. Nope… Pop Tarts!
My kids had school today so I packed them both lunch. They each got a sandwich made with rye bread and honey maple turkey. They don’t like anything on the bread, just plain. I also packed them each some water, a banana, some raw baby carrots and some animal crackers.
I didn’t have breakfast this morning. I know, bad Mommy! LOL! If coffee counts as breakfast then I did.
For lunch I made some fish sticks and fries. That is something I normally make for my kids but for some odd reason I was really in the mood for fish sticks. Since we need to go food shopping Friday evening I figured I might as well empty out some things in the fridge so I made the last of the fish sticks and fries.
My daughter had a chorus concert at school this evening so I had to make a quick and easy dinner since we had to get an early start to school. We opted for Lentils.
I know this might sound weird but here is how I make lentils.
You cook some pasta (we use any small sized pasta). After you drain the water put the pasta back in the pot. Add two cans of Progresso Lentil Soup and a whole jar of spaghetti sauce (we use Rinaldi). Heat the soup, sauce and pasta up until hot. Add some garlic and black pepper to taste and serve with some slices of mozzarella cheese.
I have NO CLUE how that came about. I was TRYING to re-create a lentil dish my mother in law used to make but she passed away and I never did get the recipe so I “invented” this recipe instead. My family likes it so I figured why not keep making it. It’s good, quick and easy to make.
We were going to get our daughter cake for her birthday but she wanted to go out to Carvel to get ice cream instead. Sadly she wouldn’t let us sing happy birthday to her while we were there (she didn’t want to be embarrassed). Oh well. Maybe on the weekend we can buy her a cake for her birthday.
