Day 5 in Bethanne’s Kitchen
This morning I was feeling much better aside from being all stopped up! I slept through breakfast and so had some peanut butter toast later.
I prepared the soaked cornbread in the morning.

Soaking the grains makes the enzymes easier to digest. It increases the health benefits greatly and helps keep the wheat allergies away. Read more about this process here and here.
I particularly like to soak grains because then I know we are getting the most nutrition out of our money. It takes a little while to remember to soak your grains ahead time. Works best with pancakes and hot cereals for breakfast. All your doing is soaking the flour and the liquid than after 8 hours or so add the other ingredients and bake! I find it easiest with quick breads. But as my sister says, “Who thinks in advance about making a quick bread!” Tomorrow I shall try my hand with yeast bread.
Speaking of hands, I’ve been keeping mine out of the dish water. I cut myself nastily with our bread knife and the wound has yet to heal

This is Life. Let that be a lesson to all you children to stay away from knives!
For lunch I made mom and me each a grilled ham and cheese sandwich.

Mom accompanied hers with pickles from last summer’s cucumber crop.
I made yogurt today as well.

I’ve been making homemade yogurt for quite a few years now. It’s so very easy anybody can do it! The quickest way is in a yogurt maker as we use. However it easily can be made in other ways as well. My sister makes heos in the oven. Mere fraction of the cost of making your own yogurt to buying it. Wonderful to have on hand during cold season!

Turned how pretty good wouldn’t you say? Mom is at a ladies meeting tonight so it was just dad and myself. I obliged dad by making oyster soup. I however had leftover split pea soup. Unfortunately we didn’t have crackers so the soup wasn’t quite as dad remembered it from his childhood. I couldn’t even bear to look at those “things” in the soup. I don’t think it will be on the menu again anytime soon!
