Day 4 in Sonshine’s Kitchen

Welcome to Day 4 in Sonshine’s kitchen. Due to the site issues we are a day behind in posting this, but that doesn’t make it any less delicious. Sonshine creates lots of frugal meals for her family and is a whiz with leftovers. Her kitchen is frugal, healthy, and fun. We are very excited to see and share a week in her kitchen. Welcome to day 4! The day were everything that was planned seemed to become unplanned or was a flop! Yes, folks it can happen to anyone! What was planned for breakfast was bagels, cereal and fruit. However, the picture above shows the second to last bagel! In other words, there was not enough bagels for all of us this morning! So another box of toaster strudel to the rescue, which I guess is okay because those were in the freezer disaster. We finished off the cantaloupe this morning along with all of us having a bowl of cold cereal. Some had Frosted Mini Wheats while others had Cinnamon Toast Crunch!

Now on to lunch, the plan was to have cheese or PB& J sandwiches, chips along with baby carrots or apple slices. This plan I like to do on occasion because then it can be a “self-service” lunch, basically they can help themselves! However, I looked into the fridge this morning while fixing hubby’s lunch to discover there was several leftovers that needed to get eaten, so I changed things to be “homemade TV dinners”. The picture is my “TV dinner”, which was baked lemon pepper chicken, crashed potatoes, and zucchini & summer squash. My daughter finished off the spaghetti, and my boys had the same thing as me but had baby carrots and shrimp instead. I am the only one that likes the squash mixture so the last time I was at the Farmer’s Market I picked some up for me! I dice up zucchini and summer squash, chop up an onion(red ones are the best!), and saute it in some olive oil(or bacon grease!).

For dinner, I had planned on grilled chicken, rice, green beans and sun tea to drink. I decided to go ahead and try the bottle of Caribbean Jerk Lawry’s Marinade that I had in my pantry on part of the chicken. Well it got 6 thumbs down out of 7!! You probably are wondering what about the marinaded chicken we didn’t like??!! Well it was a tangy sweet taste to start and then it was a hot spicy that even sun tea or water would not cut! My tummy can’t handle that much spice! I am kicking myself for getting it in the first place because I have been to Jamaica(over 12 years ago!) and have had jerk chicken and knew of the spicy factor. Oh well! It didn’t hurt to try something different to help me get out of a cooking “rut”, however, it will be all tried and true recipes for the rest of the week!
Not much going on in my kitchen today! Most of my focus today was sorting through clothes and other household items for a garage sale that I am having with a neighbor friend this weekend.
