Day 4 in Nancy’s Kitchen
Welcome to day 4 of a week in Nancy’s kitchen. We are really enjoying seeing and sharing this week with you and we hope that you are enjoying reading along.
Slowly but surely, Lawman and I are getting better. We are both much improved over yesterday. Unfortunately, Alison came down with the crud this morning.
I didn’t go to work today as I decided it would be worth it for me to give myself a full day to recover. We managed to stay in bed until 8:00 which is late for us and that extra bit of sleep felt so good.
Breakfast:
- Me - banana and toast
- Alison - 2 mini bagels and peanut butter
- Madison - cereal w/milk
- Lawman- bagel and cantaloupe
Lunch:
I thought that since I was home I would make a nice lunch of chicken & black bean tacos which had been on the menu for last night. It didn’t work out that way. Madison had her lunch in the oven before I knew it so I decided to let everyone do their own thing rather than go against the grain. Some battles just aren’t worth fighting. The black beans that I had cooked on Monday night are now tucked away in my freezer awaiting another use.
- Me - grilled cheese and pineapple
- Alison - fish sticks
- Madison - fish sticks and pizza rolls
- Lawman - roast beef sandwich, pineapple, chips
Snacks: pineapple, cantaloupe and granola bars
Dinner: Given the fact that we knew we would have a swim meet tonight, we were able to stick to our plan as it indicated we would be dining at the concession stand. Lawman, Madison and I had varying combinations of sloppy joes, hot dogs, chips, pickles and cookies. All for a total of $5.00. It was very budget friendly this evening as each item on the menu was 50 cents. It was the last home meet of the season and rather than having to pack up a bunch of food at the end of the night they decided to price it low so it would sell. Alison didn’t go to the swim meet because she wasn’t feeling well so she ate dinner at home–a ham and cheese sandwich and a banana.
It’s obvious that we are lacking in the vegetable food group. My goal is to get that back into our diet tomorrow. This hasn’t been a typical week for us due to the sickness that’s been in our house. However, we did eat fruits today. I felt good enough this morning that I cut up the cantaloupe and pineapple and had them ready to eat in the fridge. I have come to realize that if the prep work is done and fruits are ready and waiting in the fridge that they do get eaten rather quickly. The pineapple is already gone and we’ve made a big dent in the cantaloupe. It’s highly probable that it will be gone by the end of tomorrow. I’ve got a watermelon and grapes in the fridge; guess I’ll have to prep them tomorrow. Do you all find that to be the case with fruit in your house? That once all the prep work is done they eat it in a hurry.
