Day 4 in Kristen’s Kitchen

Wednesday, Day Four
Oh this morning was fabulous. Fab. U. Lous. It was fabulous because my Darling Tot slept until past 9am. I know!!! What wonders! What triumph of the human spirit! I know intellectually that it is probably because she slept like junk last night and when she finally crawled into our bed that she just couldn’t physically stay awake any longer, but still. Totally rad.
So, in celebration of that blessed event, I let the kids eat Cheerios in the playroom and I fixed myself and egg sandwich.
It’s not the most…anything of meals, but it’s pretty tasty and I am out of smoothie fixin’s so I had to eat something. It’s pretty much just two toasted pieces of bread and a microwaved egg in the middle with some cheese. Nothing fancy, but it fills the void.
For lunch the kids ate some leftover Spaghetti and can I just say they thought it was awesome that they got to have spaghetti for lunch. Apparently I need to cook this more because those kids went nuts. Alas, I got no pictures of the nuts going because they inhaled their food. I can’t actually remember what I ate, but I think it was some form of leftovers as well. You can see that I put a lot of forethought into my meal today.
The rest of the day I did laundry and cleaned up the house and the kids played in the playroom and did their best to disrupt my chores. Eventually I broke down and decided to actively parent instead of actively be a housekeeper, and we made some rockin’ homemade playdough and then we made a “Thankful Tree”. I cut out a picture of a bare tree and some leaves. Then the kids took turns telling me what they were thankful for and I wrote it on a leaf and they got to glue it on there. Tot’s answers were sweet (”My brick house” “My mommy and daddy”) and Little David just kept saying “Glue! Glue! Gloooooooooo!”. He was really thankful for glue today.
As much fun as we had, by 4:30 I was shot and ready for some adult interaction. Alas, Dave wouldn’t be home for awhile, so I went to the grocery store to get a RedBox movie for the kids so that I could try and make dinner in peace, whatever dinner was going to be because I totally wasn’t feeling like cooking and was just tired and rundown and I could feel the grump within me rising. As the Will of God would have it (totally not kidding, He saved my butt today), there was a lovely lady at the front of the store making samples of Quesadillas that she made with all these products that were on sale. I got one for each of the kids and when Tot wouldn’t try hers, I ate it. Um, YUM. It was so great that I asked her to show me how she made it and then I got all the ingredients and made them as soon as we got home.
As it turns out, all it was was a softened mixture of cream cheese and grated cheese (mexican style) spread on the tortilla, some Hormel No Beans chili lightly drizzled on top of that, then some more grated cheese on top of that, and then topped with chopped green onions. SO GOOD. And so healthy, too. Right? Right. What’s not healthy about cream cheese?? And I totally didn’t have three of them. Nope, stopped at a very responsible one. Right.
All in all, it was a good food day, if not entirely unhealthy. I swear up and down tomorrow I’m going to cook crazy healthy. Ish. As long as it doesn’t get in the way of taste. Baby steps, Baby steps.
