Day 4 in in Donielle’s Kitchen

Well, my kitchen stayed clean today! But I also wasn’t in it much. :-)

For breakfast we had some whole wheat pancakes with maple syrup and some yogurt smoothies. Even though it’s cold outside and we have like a foot of snow on the ground, smoothies are a great way for me to get more dairy into my diet as well as some good bacteria from the yogurt. (Good bacteria = good immune system!) Todays smoothie consisted of 1/2 cup of frozen blueberries, 1/2 cup raw milk, 1 banana, and a bit of ice. While the blueberries can make it rather tart, the banana always makes it sweet enough where I never have to add any sweetener. It’s just perfect.

As for my morning, I ended up leaving the house! A friend of mine and I had planned on getting out and heading to the mall with our little ones, and both the weather and the children cooperated and made it possible!! So off to the mall we went. The only unfortunate thing was, the little ones had so much fun playing in the ‘treehouse’, time slipped by a bit and they both needed lunch before we headed home. Otherwise, well….a two year old might just lose it. I should have packed a couple sandwiches, and next time I’m pretty sure I’ll remember since lunch cost a small fortune, but we headed to the food court.

And of course the only thing up there that wasn’t spicy or oriental, was fried American food. The little one and I ended up sharing a basket of chicken fingers and fries, and he also got an organic fruit leather strip as well as a small box of raisins. When I got home I downed a giant glass of water and an apple because I felt so greasy! Yuck! After eating healthy for so long, fried foods are just way to much.

I also avoided the kitchen during nap time as I caught up on all my internet business, and the afternoon snack was just a bunch of carrots.

Dinner was pretty healthy though. I made baked salmon, cubed sweet potatoes, and broccoli. The salmon was brushed with melted butter and sprinkled with sea salt, pepper, and bread crumbs. Baked according to package directions. The potatoes were again roasted and then brushed with a melted butter/maple syrup combination, then sprinkled with cinnamon. And the broccoli was steamed and then tossed with butter and a dash of salt as well as a bit of cheddar cheese.

As we sat down and took the first few bites my husband asked if the fish had been frozen. “But, of course” I answered. See, I’d rather buy frozen wild caught salmon than fresh farm raised salmon because of the additional health benefits.I also kindly told him that “Next year you should start fishing so we can have fresh fish”. (something he’s been wanting to do for the past couple years anyways ) The answer? “Yea, cause then we won’t have to eat this garbage.”

Such a stinker he is! And no, he didn’t say it in a derogatory way, he was just being silly! :-) And no, frozen fish doesn’t taste near as good as fresh fish. I wasn’t a huge fan of it either!

Hopefully tomorrow I’ll get a bit more baking done and maybe even make up some fresh butter to go along with whatever I make. Yum! Nothing is ever as good as that!
