Day 4 in Carrie’s Kitchen: Some Winner Recipes
Welcome to Day 4 in Carrie’s kitchen. We hope you are enjoying this week as Carrie opens up her kitchen to us!
Morning everybody! Wow, I can’t believe it’s already day 4! My, how time flies when you’re guest-posting!
As I said yesterday, the hubby told me he was leaving for a few days. He works in agricultural sales/consulting, so he’s kind of at the mercy of a crop’s bloom. That’s why his schedule is so erratic. I also think a bit of it is lack of organization, but don’t tell him I said that…that may be the pot calling the kettle black?? He is completely brilliant, so I give him a few passes here and there. And he loves me, dirty house and all!
So, remember the crepes I made last night? I forgot to tell you that I flipped each and every one of those crepes sans utensil! I’m pretty sure I will be The Next Food Network Star after that artful mastery! After I, ahem, flipped each one of them, I stacked them between parchment paper and refrigerated them overnight. You don’t have to make them the day before (but remember the batter needs to rest for at least two hours before frying), I just prefer to get done what I can at night so breakfast is relatively easy.

This morning, I made Blueberry Blintzes a la Tyler Florence. Didn’t they turn out gorgeous?? Plus, I just love the way food looks when the sunlight hits it! I didn’t use his crepe recipe because I love me some beer in my crepes, but I did follow the rest of the recipe fairly closely. I did not pan-fry the crepes as he instructed because that seemed like too much work. The flavor of the blintz filling was delicious, but a bit runny for my taste. I probably should have chilled the filling as he directed, but I like to break the rules sometimes. I’m crazy like that!
Next time, I will skip the blueberry sauce and use my homemade blueberry jam to top it instead. The flavor was nearly identical to the jam and if I heated the jam slightly, the texture would also be close. These are amazingly filling, but you should have seen the carnage after trying to feed it to the midget. I ruined six rags in the process of cleaning her up. Okay, that’s a slight exaggeration, but next time, I will grab a box of wipes to clean her up and spare the life of one of my kitchen rags (yes, I know rags are supposed to be raggedy, hence the name, but I like rags that don’t look like rags—I’m just a bit oxymoronic).
By lunchtime, the hubby was gone, so the midget and I ate leftovers for lunch. We had tuna salad (no bread), Beet Soup, crackers, and blueberries. At Trader Joe’s the other day, I found some crackers that piqued my interest—Roasted Gorgonzola Crackers.

I know, I thought the same thing—how could they not be delicious??? Weeeeeel, we are right! They are delicious! The midget screamed at me because her Goldfish suddenly looked lame, and I was like, “BACK OFF MIDGET! THESE ARE MINE!!” But then I caved and gave her a few and unfortunately, she loved them. *sob*
I had to do some cleaning (blech) in preparation for our company while the midget napped. My friend Stacy was bringing over her adorable 5-month-old mini-midget to hang out and have dinner. When they arrived, Stacy and mini-midget kept me company in the kitchen while I made our dessert. When Little Miss woke up, she had some graham crackers and milk for her snack.
Because I wanted to spend more time talking than cooking, I kept our dinner relatively easy. I marinated chicken breasts in Lawry’s Baja Chipotle 30-minute marinade and grilled them, ate more beet soup, and we had corn on the cob. I’ve found the best way on the planet to cook corn on the cob—the microwave! Just shuck your corn, wrap the cob in a paper towel, run the paper-towel-wrapped cob under the sink very quickly, place on a microwaveable plate, and heat on high power for 2 minutes per cob. It’s so easy and it cooks the corn perfectly!
At Stacy’s request, I served the corn with Sunny Anderson’s Mexican Street Corn slather. I had made this for Stacy at her last visit and she loved it! Tonight, she slopped it on everything, including the beet soup! I’m still stunned that she ate and liked the beet soup, as she is a self-proclaimed “Burgers and Ruebens Girl.” Somehow, I always manage to get her to eat something out of her comfort zone, and she usually likes it. Except the time we went out for sushi…

When I went to dish up our Blueberry Sour Cream Cake, I realized that I hadn’t snapped a picture of our dinner. Stacy got me in stitches when she suggested that we stage a dinner plate so I could take a picture. She was thoroughly convinced that a piece of bread could look like corn! I was shaking with laughter and I couldn’t get a picture of our cake and ice cream that was in focus. I took the above picture after she left so there would be no temptation to flail the camera around. The cake turned out lovely! It was moist and tasty. It definitely would be good served with breakfast or brunch!
I had too much fun talking about my company today to discuss meal planning and budget-friendly-faking-it-gourmet, so I’ll be sure to do that tomorrow! Thanks for joining me for Day 4! See you on Day 5!
