Day 3 in Libby’s Kitchen
Welcome to Day 3 in Libby’s kitchen. We are all very excited to see what Libby has in store for us this week, so we hope you enjoy spending this week with her!

Not a lot of time this morning as I had to be at school at 8.30am to open up the uniform shop. Christy had toast, Amy had cheese on toast and I had a slice of grainy bread with marmalade - something I haven’t had for ages. It always reminds me of our holiday to Scotland 10 years ago when every day we were served “cold” toast with marmalade and a cup of tea.

After the uniform shop and weight training at the gym, I headed off to do my weekly grocery shop (with our organic fruit and veg to be delivered on Thursday). It was a nice Winters day so I had the salad that I’d planned for yesterday. I picked fresh lettuce from the garden and topped it with tomato, cucumber, cheese, pineapple and some boiled egg. Delicious!!! I normally have ranch dressing but we were out so I had mayonnaise.

Dinner tonight was Pumpkin Cannelloni.You can find the recipe here. I had a huge organic pumpkin to use so I made some pumpkin soup with the leftovers. This is a family favourite (though dh missed out since he was out tonight). The leftovers freeze really well.

Your salad looks delicious, too. Did you know that you can make your own ranch dressing? It’s pretty easy if you already have the mayonnaise.
