Day 3 in Donielle’s Kitchen

I awoke Tuesday morning knowing day 3 was gonna be a busy day. Once my little guy was up, we had a breakfast of fried eggs, half a slice of whole wheat toast and then shared a banana and an orange. I always have a glass of water with my breakfast as it’s a great way to start the day hydrated, and being pregnant I tend to get dehydrated quite quickly. The little guy always has his breakfast with a glass of raw goat milk. (he can’t quite tolerate cows milk yet)

Once we were dressed and ready, it was time to hit the kitchen. Which was already a mess from the night before. I told you I hated to clean it! I think this pregnancy makes it worse, since my back is usually killing me by the time I get dinner done. Once we eat, I’m ready to put my feet up! But I’m gonna be brave and show you what it looked like first thing, with absolutely no counter space. Why would I put myself up for embarrassment? Well, today is our 8th anniversary and my goal is to have a clean house by the time my husband gets home! So here’s the before:

First I pulled out some of our milk from the fridge and skimmed the cream off the top. (We buy raw milk from a local dairy farm not only for it’s health benefits, but because we also have to buy goat milk) Later this week I’ll make up some butter with it.

Then I put the ingredients into the bread machine for some nice fresh homemade wheat bread. Much needed since I was completely out. I actually started making my own bread about a year ago not only to better our health, but to save money at the same time. We like it so much now that when I bought a loaf a couple months ago, all my husband did was complain that it had no taste!

Once I had the bread going, it was time to clean up just a bit so I had room to move around! (and some counter space and clean dishes!)

The tortilla shells I make need to set out for at least an hour, or up to eight hours, (something to do with relaxing the gluten so they roll out easier) so I mixed those up next and placed a bunch out on a pan and set them off to the side. And if you’ve never made your own shells, you really must! They are so much better than any store bought shell you can buy. My husband raves about them all the time! I actually bought some from the store a few months ago while still in the midst of first trimester yuck, and we threw them out we thought they tasted so bad! Once those were out of the way, I started in on some granola bars.

Finally done for a bit, I quickly tossed all the dirty dishes into the dishwasher and hand washed all my plastic and/or teflon pans I still use.Then it was time for lunch and a break!

Lunch consisted of tuna fish sandwiches and an apple for me, and tuna, leftover burger meat w/ pizza sauce on it, and some sliced peppers and dip for the boy. Again, he won’t eat tuna sandwiches, but he’ll eat the tuna plain. Whatever. And I didn’t want his half a burger to go to waste so I simple put a bit of leftover pizza sauce over it and he couldn’t get enough. The peppers are also super easy since I slice them up when I get home from grocery shopping. Then they’re sliced and ready to go when he needs a quick snack or lunch!

I then got out of the kitchen for bit to catch up with both my blogs, Raising Peanuts and Naturally Knocked Up as well as my e-mail. But my time was limited since I knew I had to roll out all those tortilla shells (and yes, I know they make tortilla presses, but I just don’t have one yet).

I probably spent about and hour making the shells, and I also sliced the bread and cut the granola bars while I was in there. Once those were done, it was actually time to start dinner. I had planned on taking the easy route and making tacos, but since it was our anniversary and all, I figured I’d make up some yummy burritos. I hadn’t made them in forever and it sounded super good!

To make them you’ll need:
1 1/2 pounds of ground beef
16 ounces or one can of refried beans
burritos shells
8 oz tomato sauce
1 can enchilada sauce (still haven’t found a recipe I like. If you have one, send it my way!)
1 jar brown gravy ( I actually ended up making my own with some beef stock I had in the house)
2-3 cups of cheddar cheese

Brown beef. Mix together tomato sauce, enchilada sauce, and brown gravy in a saucepan over medium-low heat. Once the meat is browned, you can add the beans (or if you’re like me and don’t like them, make a few burritos beef only first, then add the beans). Roll them all up and place into a 9×13 pan. Cover with the sauce and top with cheese. Bake for about 20 minutes in a 350 degree oven. They are super easy and taste great!

After dinner my husband took our little guy downstairs to play while I got a chance to clean up the kitchen. And it actually looks much better, don’t you think?

Ahh….now I can really relax and enjoy my evening! Dessert consisted of some organic/natural root beer along with a slice of turtle ice cream pie. Hey - it’s my anniversary! Once in awhile, I do splurge! Plus I found a box at the store that only contained 2 slices instead of buying the whole pie. So at least I won’t be eating it all week long!

I didn’t get everything done I had wanted to, but unfortunately my preggo body has limits and my back was pretty sore form walking around the kitchen all day, so I took it pretty easy after awhile. And I am so very lucky that my son decided to entertain himself all day long. It made it so much easier! Plus, there may just be a method behind some of my laziness. He actually played with his trucks on our tub of Christmas decorations I have yet to set out, but brought in the house a week ago. And then my mom stopped by for a bit to pick up some things, so that helped too!

Tomorrow may or may not be a day out with a friend depending on the weather! So we’ll see what the day holds for my kitchen. Maybe it’ll stay clean!

  2. I love making homemade wheat bread. There is nothing like a fresh warm slice of bread with just a little butter or even nothing at all. Thanksf or sharing your day. I’m going to check out the granola bars. :D
