Day 3 in Carri’s Kitchen

Bethany (age 3 months) did not cooperate as much as she did yesterday, so I really didn’t do much in the kitchen today.  I spent most of the day snuggling her.  Life’s not too bad when you cannot do work because you get to snuggle a baby!

For Breakfast we had cinnamon toast and yogurt (Both made yesterday).  I let the kids add home made strawberry syrup to make it strawberry flavored.  They love it.  A couple of them love to add granola to the yogurt, which makes it more filling too.  The total for this meal was about $4.

For lunch we had tomato sandwiches with cheese and lettuce.  There is always the option of peanut butter and jelly if they don’t like the tomato sandwiches.  We also had carrot sticks.  Total for this meal was probably $3 since we were using the leftover lettuce from the $.99 bags, and tomatoes from our garden.

We had watermelon for snacks… maybe one of the last of the season.  It is bittersweet to have the weather changing… colder days means less fruit, and fresh veges, but more soups, stews, chili, and comfort foods like that.
For dinner I grilled steaks.  Here’s my view behind the grill… like my backyard?!  I told you we lived in the country.  I love living here.  Even if I don’t have a Starbucks nearby.  Anyone know how to make the pumpkin spice latte?  I’d love a recipe for that!

I know steaks seem extravagant, but we raise a cow each year, and therefore get to have steaks once a month or so.  There is no better beef than the home grown stuff… oh, it is yummy.  We also had baked red potatoes, salad, and broccoli.  The total was probably $10 or so?  Hard to tell, but that’s a good guess.

We eat the meat off the bones, then I will use them tomorrow for beef broth and make a beef and vegetable soup for dinner before church.  We have some leftover vegetables in the fridge which I will just throw in.  I usually fill the soup pot and it ends up lasting us a dinner plus lunch the next day.
I also have to do up the rest of the apples - maybe 3/4 of a bushel.  So hopefully Bethany will cooperate with me and take good naps!

  3. Starbucks Pumpkin Spice Latte (Copycat) Recipe

    3 tablespoons canned pumpkin
    2 tablespoons vanilla syrup
    1/4 teaspoon pumpkin pie spice
    1 cup milk
    3 ounces espresso (1-2 shots)
    In a small saucepan, stir pumpkin puree into milk.
    Add vanilla syrup and pumpkin pie spice.
    Heat gently, continuing to stirring occasionally just until steaming and foam begins to appear.
    Pour pumpkin flavored milk into a tall mug and pour espresso over.
    Top with whip cream and a dash of pumpkin pie spice.
    Note: If you like it slightly sweeter; add a bit of vanilla flavored coffee cream.
