Day 3 in Alisa’s Kitchen: A Hit Recipe!

Welcome to the third day in Alisa’s kitchen. It’s been such a delight taking a peek into her kitchen this week. Alisa has been working on getting her kitchen “on track,” and she’s been having a lot of fun in the process. We hope you’ve been enjoying spending this week with Alisa.

Since The Dad fixed my waffle maker yesterday, I had to make waffles this morning. I used my old tried and true recipe. It takes a lot longer to put together than the average waffle recipe, but these are really that good. They are very filling with all the extras I throw in. The Girl and I had ours with some of our Strawberry Jam and fresh strawberries. I made a double batch to throw some in the freezer.

For lunch, The Boy munched on the Malt O Meal version of Captain Crunch that we bought at the grocery store yesterday. He loves to have cereal for lunch. I sliced up watermelon and didn’t have to force anyone to eat that. The Girl had a peanut butter & jelly (our Cherry version) and Doritos with her watermelon. I had the last hot dog and watermelon. Ok, I had some Doritos as well. The Dad made himself a PB&J sandwich, salad, and some Doritos. I have to say, we do not normally have Doritos or any thing close in our house. They were on sale and I really bought them for the BBQ on the 4th, but The Boy looked at me with those cute blue eyes when he wanted a snack earlier and how could I say no? Trust me, those blue eyes will get you everytime. It cracked me up because I was eating my lunch and The Dad was sniffing around. The Doritos had wafted to him and he had to have some!

After lunch, I did dishes. The Dad works from home and now that The Kids are out of school, we are running out of dishes everyday. I swear the forks are disappearing. Since I was in there and The Kids were hanging out, I figured I’d get a good kitchen scrubbing done. I had all the best intentions to move on to our baking, but got sidetracked.

For dinner, we tried out Almond Lemon Chicken. A recipe that has been on my list for a while, but for one reason or another kept getting cut from the final list. What a mistake that was! This was delicious. Everyone loved it. Amazing. The Girl said it tasted like Chinese food which she was in the mood for. The best part? The Dad cooked. I am so very lucky because not only can he cook, he likes to cook.

The real way you can tell The Dad cooked tonight, is his presentation or “plating” as he calls it. I call it watching a little too much Hell’s Kitchen!

The Boy didn’t eat the sauce, but he didn’t complain that the chicken had been cooked in it either. We will definitely be cooking this again.

Tomorrow, I have to get to work for real. The good thing about me procrastinating is that I am a procrastinator. I work well under pressure, it gives me that extra nudge of motivation! So, (keeping my fingers crossed) on the list for tomorrow is S’more Brownies for Rangers, The Barefoot Contessa’s 4th of July Cake. I made this cake last year for the first time and let’s just say, it’s a new tradition for us! Delicious. I am also making Noble Pig’s Firecracker Cupcakes, if I can find some Pop Rocks. Darn things are harder to find than I thought. Also, I must get the ice cream going, Strawberry and Cherry. Cook up the Barbecue sauce and making potatoe salad. Hmm…maybe I need to get back into the kitchen tonight! I figure I can make the cake and cupcakes ahead of time and frost them Friday. Is tomorrow really Thursday??

  1. The recipe looks yummy… I am always looking for way to entice my hubby to eat less red meat and more chicken.
