Day 2 in Janet’s Kitchen

Today was the first “official” day of spring break. Dale was up (4:30am!!!) and out the door before Mark and I even thought about getting up. Dale made himself another breakfast sandwich. As the sun came up Mark wanted cereal for breakfast…. So he enjoyed some Honeycomb (which I snagged on a great deal).

and I had Gorilla Munch (gluten free) and my usual coffee.

After breakfast and a quick kitchen clean up, we ran some leftover soup from last night to my grandmother, Wanno, who lives down the street. It was so nice out we decided to take Wanno to the park and to lunch.

So, lunch was not at my kitchen and it was lovely! Not on my diet but soooooooo yummy.

Snacks today were so boring; I didn’t even take a picture. We had cheese and crackers and some fruit from the snack tray.

Dinner was a new concoction, which is based loosely off of Amy’s Taco Soup. Here is my spin on it:

Taco Soup

  • Taco Shells (I bought the taco kit so I think there were 12 in the box)
  • 1lb of ground beef
  • 1 can of kidney beans- drained
  • 1 can of Rotel- drained
  • 1 packet of Taco seasoning
  • 1 packet of Ranch Dip Mix
  • 2 cups of cooked brown rice
  • Mexi Corn (you can make your own or buy the canned)
  • Toppings: cheese, sour cream, taco sauce, etc.

Brown ground beef in a skillet and drain well. Mix beans, Rotel, taco seasoning, dip mix and rice into the beef. Serve with corn, toppings and shells.

I got things ready for tomorrow. We are planning on going to the zoo, so I prepared some snacks (oranges, water, crackers and fruit snacks) and Dale’s lunch for tomorrow. I also went ahead and browned sausage for breakfast burritos tomorrow.
