Day 2 in Donielle’s Kitchen
Monday morning did not start out well. AT ALL. For some reason or another my little one decided to wake up multiple times throughout the night, and by 4 o’clock I couldn’t get back to sleep. So I was out of bed by 5am and although he woke again at 6, he was put back to sleep and thankfully slept till almost 9am.
You’d think sleeping in would have helped the personality he awoke with, but alas, he still had a case of the grumpies. So, in order to feed him quickly, I changed around my meal plan a bit in order to get him fed as quickly as possible. We ended up having the banana muffins I made on Sunday (since unfortunately my friends kiddos were a bit ill with the start of colds. And me being pregnant, I don’t want to get sick! So we weren’t headed there for the day) and some fresh juice from the juice maker.
Now, I don’t know about you, but I can’t stand using my juice maker! I got it this last spring at a garage sale and have only used it a few times since. c. But, while I had extra time when the kiddo was sleeping in, I started to clean out the fridge and noticed we had some fruit that would go bad if not eaten right away. So I juiced 3 oranges, 2 carrots, and a bowl full of red grapes together. Tasted fabulous!
We ended up skipping our mid morning snack as we were out picking up a few groceries for the week and ended up having leftover roast for lunch. Well, I had roast. My son, for some reason, won’t eat it. He loves plain meat, he loves potatoes, but mix them together and he won’t touch it. Silly Kid. So he had some cut up meat from the roast (shhh, don’t tell him!), sliced green and red peppers and dip, and we shared an apple as well.
After cleaning up the kitchen, I finally had enough room to start making dinner. We had burgers (I had just picked up our quarter of grassfed beef earlier in the day) on homemade buns with cheese. I do sharp white cheddar to stay away from the processed dyed stuff, but my husband loves the american cheese, so we normally have both in the house. For sides, I roasted up some sweet potatoes, and during the last 10 minutes or so of cook time I brushed them butter and maple syrup (1:1 ratio) and sprinkled with cinnamon. We have normally been doing brown sugar, but I saw the syrup thing on the Today show last week and thought I’d give it a try. We both really liked it! So much better than refined sugar too. I also cooked up some Kale, which no one will eat but me. I don’t mind it at all. I can’t say it’s my favorite thing to eat, but it is super healthy!
(Now I did forget to take a picture before we ate, so this is actually a photo of my husbands lunch for the next day (notice the orange cheese! I always make extra to send with him so he’s not stuck with sandwiches all week long). And the kale - that’s just to show ya’ll that ‘yes, I did make kale’!)
And again, my son refuses to eat a burger put together, so on his plate he got half a bun with some mayo, cut up burger meat, a few pickles (all separate!) and some sweet potato chunks. Like I said, silly kid.
So day two was a pretty average day for us, and tomorrow will most likely be my baking day, so I’ll be in there a bit more. Anyone want to volunteer for clean up? It’s the only part of cooking I can’t stand. And I’d like it to be clean when my husband gets home. (It’s our 8th anniversary and hey, the economy is in the dumps so we’re pinching our pennies as best we can and having dinner at home. But I’d like it to at least look nice. It’s easier to relax that way!)
