Day 1 in Kristen’s Kitchen

Sunday, Day 1.
We will say that today was both a major success and a definite learning experience. The success? I make kickin’ Empanadas. The learning experience? I do not make kickin’ Sweet Potatoes.
This morning I woke up with a sick Tot. She’s been running a fever and had a sore throat all weekend, so I wasn’t planning on going to church, but I had still hoped for a miraculous recovery. Instead, I got the unexpected surprise of having calm morning because the Tot was no where near normal energy levels. It was rather lovely.
We started the day with a little non-instant Oatmeal. It’s been many a moon since I’ve made oatmeal that doesn’t come in a paper package and that isn’t baked, so this was new for me. It came out a little soupy, but it wasn’t anything a little brown sugar couldn’t fix. Really, there isn’t much a little brown sugar can’t fix. Except sweet potatoes. But we’ll get to that.
I ate my Oatmeal with my normal fruit smoothie (1 c. oj, 1 banana, and 1 c. mixed frozen fruit) and was feeling good, Tot ate some of hers, and Little David knocked his out and was quite pleased.
When Dave got home from church I started on the Empanadas. Last night I had made them for the first time and quickly realized that we did not need 12 of them. So I made half the batch and then stuck the rest of the ingredients in the fridge overnight. It turned out to be quite the smooth move, as the flavors had plenty of time to mix and the dough set well. I stuffed them with ground chicken, Rotel, garlic, and some other spices that I just dumped in along the way. They turned out awesome. We all ate more than we needed to and it was declared that these should be put into our rotation of meals.
And then it was time for a healthy, non processed, totally whole foods snack.

Hey, you can only be good for so long.
And that brings us to the non picture portion of our day. For dinner tonight I made grilled chicken (which I do all the time and isn’t the sad part of the story) and mashed sweet potatoes (which is the sad part of the story). For some reason, be it the cooler temperature of the chicken when I finally got to serve it or that the flavors of the sweet potatoes and brown sugar and butter just didn’t get right, it turned out beyond gross. No amount of brown sugar could fix those puppies. It was bad. It was real bad. I mean, it was so bad that we picked at dinner, called it a total bust and then ordered pizza thirty minutes later. I didn’t take a picture of that because I was too busy chowing down from sheer gratefulness.
Which just goes to show you, brown sugar may fix a lot, but pizza fixes everything!
Well, I will see you all tomorrow, I’ll be experimenting with roasted cauliflower (gasp!) for dinner and tempering that with pb & j for lunch. Can’t push out of my shell too fast now!

Those empanadas look delish!!
Those empanadas look excellent! We LOVE roasted cauliflower. It’s the only way I can get my hubby to touch it so I hope you enjoy it. I think just about any vegetable tastes great oven roasted so it’s how I cook a majority of my veggies lately.
