Day 1 in Julie’s Kitchen

Good Morning. Welcome to Day 1 in my kitchen!

I am frantically preparing breakfast for my boys (Oatmeal and toast) in an attempt to get them fed, dressed, and out the door in time for Sunday School. Oatmeal is a favorite breakfast food of my boys and they usually dip their toast into the oatmeal. Its a healthy, warm way to start out a cold, windy morning.

After church, we are having brunch at Bob Evans so I won’t be back in the kitchen for lunchtime. But, if you’re looking for a new recipe, I thought I’d share Julie’s fabulous fudge. It is an impressive treat to pull out of your proverbial hat when you discover you have guests coming and nothing sweet to nibble on while you sip coffee and catch up on the gossip.

I’ll go ahead and warn you though, my culinary expertise may surprise you. (That’s a joke for those of you who know me personally!)

I have two requirements when baking in my kitchen.

1. Quick

2. Easy

What can I say? I am a simple girl. And, this fudge… it is simple. I call it Julie’s fabulous fudge although if the truth be known it is probably called “No-fail fudge,” or “Five-Minute Fudge.” Whatever its called, I think you’ll find it to be fabulous.

JULIE’S FABULOUS FUDGE

  • 1 tub of vanilla frosting
  • 18 ounce jar of JIF Peanut Butter

1. Peel the seal off of a tub of vanilla frosting. Microwave it for 20 seconds.

2. Mix vanilla frosting and jar of peanut butter in a microwavable container and microwave for two minutes.

3. Stir and pour mixture into an 8X8 {Longaberger} Baking Dish.

4. Allow fudge to harden.

5. Enjoy.

See, I told you it was quick and easy.

(For a simple variation you can substitute chocolate frosting or add your favorite nut to the end mixture.)

Before going back to church for the evening service, we usually just eat a quick sandwich or make a light snack before bedtime.

I try to keep fresh fruit on hand for this reason. When your serving a peanut-butter and jelly sandwich or a grilled-cheese sandwich, adding some fresh-fruit to the plate makes it a more nutrition choice.

I’ve enjoyed having you in my kitchen today. I promise it will be a little less frantic tomorrow, so I do hope you’ll stop in.

  1. I just added peanut butter and vanilla frosting to my grocery list. I think I’ll have my girls help me make this today!
