Day 1 in Jennifer’s Kitchen
Welcome to Day 1 in Jennifer’s kitchen. We are all very excited to see and share her week. Jennifer feeds her family very healthy and frugal meals. Her willingness to try new things is inspirational. We hope you enjoy spending this week with Jennifer.
Welcome to my kitchen for day 1. We started the day the way we start many days around here. With homemade muffins - except I made them the night before. While dinner was in the oven Saturday night I mixed up a batch of muffins. This way I am only using my oven 1 time but am cooking for 2 meals. Saves me time and energy. We get a homemade breakfast on a morning where there would otherwise be no time to make anything from scratch. Anyway we had Apple Muffins and strawberries. Everyone drank water and Kevin had coffee.
After church the kids had PB&J, not their favorite by any means (are my kids the only ones that don’t like PB&J?), however they wanted to try out the blueberry jam I had made yesterday after we went blueberry picking. Along with the sandwiches they had peaches. Lunches tend to be random affairs around here and Kevin had nachos with cheese and salsa and a peach and I had a bagel with turkey, egg and cheese (my favorite). I had iced tea for lunch and everyone else had water.
For dinner we had Swedish Meatballs over pasta. This is a favorite around here and the kids were asking at dinner if we could have it more often. Like I often do I had made a triple batch in June. I don’t do once a month cooking by any stretch of the imagination, but I like to have complete meals or partial meals (at least a few) in the freezer at all times because it makes my life a lot easier. So I just pulled the meatballs out of the freezer and made up the sauce and pasta for it to go with. And as usual I had to do some substituting to accomodate Emma. The meatballs are made with turkey and sausage, I used rice milk instead of milk and egg replacer instead of egg. They are still delicious.

For dinner Emma had pasta with meatballs and tomato sauce, because she can’t have the swedish meatball sauce. Pasta is her favorite, so she was very happy tonight. We also had a plate of cantaloupe, cucumbers and broccoli.
This is our favorite way of having fruits and veggies. I fill a plate and we all take what we want. The kids had milk (Emma had soy milk) and Kevin and I had water. Usually we have milk, but I forgot to get it at the store today, so we are running low. I hate it when I do that.
Snacks are hit or miss around here many days. We didn’t have a morning one and this afternoon a couple of the kids had snacks and a couple didn’t. I had gotten a warm delights at the grocery store (sale + coupon) and Kevin and I split it for a treat this afternoon. Tonight they will probably have yogurt, but that is no guarantee.
