Day 1 in Donielle’s Kitchen

Welcome to day one in my kitchen! I even did all the dishes and wiped off the counter for you! Don’t get to used to it though, because it most likely won’t last the day. I’ve just gotten used to the fact that it’s always a mess and no longer make excuses for it. It’s the most used room of the house and since I make so much of our food from scratch, it tends to get a bit (or a lot) messy at times. Plus, by the time I’m done baking, either the babe I’m pregnant with has me all tuckered out, or my 2 year old is in need of some major playtime. So I tend to forgo the cleanup and deal with other things first!

Sunday mornings can kind of be kind of crazy for us, so I try to have breakfast prepared at least the day before. Breakfast this morning consisted of pancakes with real butter and real maple syrup. I normally make a big batch during the week and freeze them for busy mornings. I just use a modified version of good ‘ol Betty Crocker’s recipe to put a bit more nutrition in them.

Pancakes:
2 eggs (lightly beaten)
2 cups flour (I use at least half unbleached white and half whole wheat)
1 1/2 cups whole milk
2 Tbsp maple syrup or honey
4 Tbsp melted butter
5 tsp aluminum free baking powder
1/4 tsp celtic sea salt
1/2 tsp vanilla
1/4 tsp cinnamon
Mix all ingredients together and pour batter, about 1/4 cup at a time onto a medium high skillet.

Oh, and we had smoothies. My little man LOVES his smoothies!

Our morning was spent at church where, unfortunately the little one gets tons of junk snacks and comes home all wired up and barely eats a lunch. So we put him in his highchair and he had some plain yogurt with honey and a peanut butter sandwich on homemade bread while I fixed lunch for my husband and I. After the boy was down for a nap, we enjoyed (oh, the peace and quiet!!) some grilled cheese sandwiches and roasted potatoes. O.K., so they were fried a little too! After they were almost done in the oven I popped them into a frying pan with some butter for a little extra kick!

For dinner tonight we’ll be having a venison roast from the crockpot, cooked with potatoes, carrots, and onion. Took all of 5 minutes to chop everything and the crockpot does all the work! Just the type of cooking for a nice lazy Sunday afternoon. And the smell wafting through the house is simply divine. Mix that in with the gorgeous view of the foot of snow we received yesterday, and it’s practically right out of a storybook.

Normally I do try and stay out of the kitchen for the rest of the day, but since I’ll be heading into town tomorrow to visit a friend, I thought I’d bring some whole wheat banana muffins (from the Sue Gregg cookbook) along with me. Plus, I need some hamburger buns for tomorrows dinner so I’ll get the bread machine started on those. Other than that, I’ll just toss some oatmeal out on the counter to soak for tomorrow’s breakfast and then I’m really heading out of the kitchen. Clean up? Well, that can wait I guess.

  1. Thanks for sharing your kitchen this week, Donielle! :) I’m looking forward to the rest of the week. I, too, am realizing that my kitchen really is always in some state of disarray. But kitchens are meant to be used; not just looked at! :) So it’s ok.

  2. Those pancakes sound good. Is that 1/4 tsp. cinnamon or 1 1/4 tsp. cinnamon?
