Chocolate Chip Muffins

 Chocolate Chip Muffins I

Ingredients

  • 1 3/4 cups white flour
  • 1/4 cup whole wheat flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup buttermilk
  • 1/2 cup oil
  • 1 egg
  • 1 cup chocolate chips

Directions

Preheat oven to 400 degrees. Mix all the ingredients together, except for chocolate chips. After it’s mixed, stir in the chocolate chips. Fill greased muffin tin (or paper muffin cups) and bake for about 12-15 minutes or until golden brown. These muffins can also be frozen and reheated in the microwave or oven.

Makes 12 muffins

UPDATE: I recently made this recipe using 1/2 cup applesauce (all I had on hand was sweetened applesauce) in place of the oil. I didn’t tell my kids I had made that change until after they ate them. Imagine my surprise when (before I told them of the substitution) all three commented that those muffins were the best I’d ever made! So now I always make this recipe with applesauce because my kids specifically ask for them that way.
